Research
Our research and curriculum focuses on the understanding of the function of nutrients, phytochemicals, and toxicants, and the metabolic interaction of these elements in living organisms. The application of this field informs recommendations for dietary patterns to achieve optimum health and the treatment or prevention of chronic disease conditions (including diabetes, heart disease, and cancer). Additional application also addresses health and safety concerns in food and chemical production and the environment. Our goal is to prepare students to make successful contributions to research, education, industry and government, and/or participation in advanced studies in the health and biosciences.
